Heart healthy & soul warming - February CSA share

This month, our Classic share is filled with red berries and vegetables to celebrate Valentine’s Day and American Heart Month. Eating berries is an outstanding, delicious way to decrease cardiovascular inflammation. Our organic raspberries and cherries are delicious in baked goods, simmered into a demi for roasted meat, or right out of the bag. Some members love snacking on our frozen cherries after exercising as it gives their bodies a recovery boost!

On the veggie side, we’re featuring red tomatoes and peppers. They can be used together in many nourishing hot soups, stews, and dips – perfect as we continue through this cold snowy season. Scroll down for an awesome pepper recipe.

Tomato, Feta, Red Pepper Cazuela
adapted from The Splendid Table | serves 4

Easy, filling, heart warming, and zesty – this is a recipe you will return to again and again. Makes a delicious lunch or first course. You can improvise and add additional flavors/herbs as you like!

Heat oven to 425 F.

1 lb block of feta cheese*, not crumbles
2 Locavorious frozen whole tomatoes, coarsely chopped
1/2 bag Locavorious frozen sweet peppers
zest of lemon or orange
12 to 16 oil-cured black olives
salt + pepper
olive oil

Break the feta block into large chunks. Place in four small baking dishes or one large. Top with tomatoes, peppers, zest, and olives. Season with salt and pepper, drizzle with olive oil. Cover dish(es) with aluminum foul and place on a baking sheet. Bake until heated through – about 25 minutes – removing foil after 20 to let the cheese brown on top.

Serve warm with pita, bread chunks, or the like.
